​Preserving Tropical Fruits and Vegetables from the Farmer to the Consumer


 
            Hawai‘i has a centuries-old tradition of food production, and the College of Tropical Agriculture  and Human Resources (CTAHR) at the University of Hawaii at Manoa continues this agricultural tradition into the 21st century. Hawai‘i’s farmers, from small-scale and beginning farmers to well-established operations, face many challenges and opportunities. The role of CTAHR as a land-grant institution is to assist all members and sectors of Hawai‘i’s food and agricultural system to reach their full potential in an environmentally and socially compatible way. CTAHR has a long history of collaborative regional work and work in many overseas locations in Africa and Asia.
 
            The College has focused on developing applied technology to improve the quality of our fresh fruits and vegetables produced and ensuring that these commodities are marketed in a safe and sustainable way. The faculty involved in these postharvest related activities include.

Robert E Paull
 
My research program's focus is the adaptation and application of newer technology to the improvement of postharvest handling in a integrated and systematic way. This research has led to improvement in production practices, and the postharvest handling and marketing. All the research is done in conjunction with and in support of local industries and individual growers, shippers and marketers.

My general extension activities include vegetable and fruit disease management both preharvest and postharvest. I have also been involved in the papaya breeding program for disease resistance and protea and orchid disease management.

​Miaoying Tian
 
My lab is interested in dissecting the molecular basis specifying pathogen virulence and plant resistance in order to develop novel disease control strategies. We mainly focus on vegetable and fruit diseases caused by fungi and oomycetes. Various genetic, genomic, molecular, biochemical and plant pathology approaches are used in our research with an ultimate goal to develop novel effective environmental friendly disease control strategies. In addition to basic research, we are also involved in translational and applied research to translate discoveries from basic science to practical disease control measures.

My research interest are in genetic fingerprinting of microbial communities in food, microbial survival and virulence during food processing, rapid detection of food borne pathogens, probiotics and functional food and predictive microbiology.

Stuart Nakamoto

My applied research and extension activities include marketing of perishable products; adding value (via form, location, time, ownership, information) and direct marketing. I am also involved in new crops, products, and markets development. These activities involve risk management education, including development and adoption of marketing and management tools for agribusiness, record keeping, crop insurance, cost of production & break even analyses, and risk management outreach for socially disadvantaged growers.

Joannie Dobbs
 
My areas of interest include multiple facets of food systems as related to changes in nutrient composition of foods and the effects on short and long term health. These facets include: climate and environmental changes; natural resources such as water and soils; types of agriculture; food processing, formulation and preservation. I am also involved in food labeling and regulation, computer nutrient analysis, and health journalism.
Specific aspects of food composition of greatest interest are both essential and environmental minerals.

PingSun Leung 

The current research focus is in aquacultural and fisheries economics, and regional economics. Recent published work has evaluated food consumption trends and the quantifying regional food waste patterns.
 
Teaching responsibility are in engineering economics, spreadsheet modeling, biosystems modeling, biosystems simulation and operations research for management.
 
I have served as consultant to UN Food and Agricultural Organization, Network for Aquaculture Centres in Asia-Pacific, Asian Development Bank, Mekong River Commission, WorldFish Center, and UN Development Program.
